Chef Johnson
began his culinary career at an early age as a free spirited youth
in the Colorado mountains; harvesting a wide variety of wild plants
and animals and experimenting with primitive hunting and cooking
methods. The Colorado outdoors and the indigenous foods of the area
are still the greatest influences on his culinary style. His
exposure to different ethnic foods during his travels throughout the
North, Central and South Americas has led to him using many
different flavors, techniques and presentations in his menus.
Chips background is extensive,
having been a chef and restaurant manager in such notable
establishments such as the Inn at West Vail, The Tyrolean Inn in
Vail, Golden Eagle Inn in Beaver Creek, Plaza Club of the Rockies in
Colorado Springs, and the Craftwood Inn in Manitou Springs. In early
2001, he took on the position of Executive Chef at the Briarhurst
Manor, a historic culinary landmark located in Manitou Springs.
Chip has placed in the top 3 in
many different culinary competitions, and has consistently garnered
4 forks or 5 forks in local reviews. He currently retains the
position of Secretary of the Pikes Peak Chapter of the American
Culinary Federation, and holds the position of Chef and Restaurant
Chair of the Colorado Springs Taste of the Nation 2001. He is also a
member of the Colorado Chefs Collaborative. His extensive knowledge
of wild game and native foods along with his innovation and culinary
skills has produced a genuine contemporary Colorado Cuisine.
